Ingredients:

• 225 g – chick peas
• 1 Clove – Garlic
• 1 tsp – soya sauce
• 10 black Olives
• 1 rounded tbsp – chopped Parsley
• 1 tbsp – Lemon juice
• 8 Lettuce leaves
• pepper
• salt

Method:

  1. Soak chick peas in cold water, overnight.
  2. Drain and place in a saucepan.
  3. Cover with fresh water, bring to the boil, cover and simmer until tender but not mushy, about 45 mins. Drain and place in a bowl.
  4. Peel and crush garlic to a smooth paste with a little salt.
  5. Mix garlic, oil, lemon juice, a shake of pepper and soya sauce together.
  6. Pour over chick peas. Stone olives and chop.
  7. Sprinkle over chick peas with parsley.
  8. Mix well and chill. Wash and shred lettuce.
  9. Place in a salad bowl and pile chick peas on top.
