Ingredients:

• 3 – Potatoes
• 1 – onion, finely chopped
• Salt and pepper to taste
• 1 tsp – dill
• 1/4 cup – Butter
• 1/2 cup – grated cheddar cheese
• 1 tsp – paprika

Method:

  1. Peel and cube potatoes into 1/2 inch chunks.
  2. Toss with onion in a buttered casserole.
  3. Generously dot with butter.
  4. Season with salt and pepper.
  5. Sprinkle with chopped dill. Cover. Microwave on full power for 10-12 mins or until potatoes are tender.
  6. Sprinkle with cheese and paprika. Let stand, covered, for 3-5 mins or until cheese melts.
  7. If you wish to have a crispy topping, put the cheese topped casserole under the broiler for a minute or two.
