Ingredients:

• 3 bunches Spinach (finely chopped and washed)
• 250 g – Paneer (cut into cubes)
• 1 big Onion (very finely chopped)
• 1.5 tsp – Ginger Garlic paste
• 2 Tomatoes (made into a puree)
• 3 Green chillies (finely chopped)
• 2 tsp – coriander powder
• 2 tbsp – oil
• salt to taste

Method:

  1. Put the spinach in a large microwave-safe bowl, cover and microwave on 100% power for 6 minutes.
  2. Stand 3 to 4 minutes, remove and blend to a smooth puree. Keep aside.
  3. Into the same dish, add oil. Microwave at 100% for 2 minutes.
  4. Add the chopped onions, ginger-garlic paste and green chillies and cook for 4 minutes. Add the tomato puree.
  5. Cook the tomato puree at the same level for 6 minutes or till the oil starts to separate.
  6. Add the coriander powder and salt. Cook for another 60 seconds. Stir in the pureed spinach.
  7. Add the paneer cubes and mix very gently and microwave at 60% power for 5 minutes.
  8. Serve with hot phulkas and onion slices.
