Ingredients:
• 150 gms – Potato
• 1 medium size – Carrot
• 1 medium size – beet root
• 1/2 cup – green peas, cooked
• 1/2 cup – onion, minced
• 2 tbsp – Mint leaves, chopped
• 2 tbsp – coriander leaves, chopped
• 2 tsp – ginger-garlic paste
• 1 tsp – chilli powder
• 1/2 tsp – Turmeric powder
• 1 tsp – Garam Masala powder
• 1 tsp – dry Mango powder
• salt to taste
• 2 tsp – oil
Method:
- Boil, peel and mash the potato.
- Peel and grate carrot and beet root.
- Heat the oil in a non-stick fry pan.
- Add onion, fry till light brown.
- Add ginger-garlic paste, fry till fragrant.
- Mix all the powders with 2 tbsp of oil and add to the pan. Cook stirring for 1 minute.
- Add carrot and beetroot. Sprinkle with 1/2 tsp of salt.
- Cover and cook till the vegetables are soft.
- Add mashed potato, green peas, and salt and mango powder. Mix well.
- Add mint and coriander leaves.
- Mix well and remove from fire.
