Mixed Vegetable Kebabs

Ingredients:

• 2 cups – of any mixed vegetables such as carrots, peas, beans, potatoes, etc.
• 1 tsp – chopped Garlic
• 1 tsp – chopped Ginger
• 2 tsp – Red Chilli powder
• 1 tsp – cumin powder
• 2 tsp – Lemon juice
• 2 tsp – chopped Coriander leaves
• 1 tsp – chopped Mint
• 1 – Egg beaten
• 3 tbsp – Refined flour
• Salt to taste
• 4 tbsp – oil or Butter for frying

Method:

  1. Cook the mixed vegetables with a little water and mash well.
  2. Mix in the chopped garlic, ginger, red chilli powder, cumin powder, coriander leaves, mint, salt, egg and flour.
  3. For into small oval shaped kebabs.
  4. Heat oil in a shallow pan and shallow fry the kebabs a few at a time till golden brown.
