Ingredients:

• 100 g – Cauliflower (cut into medium – sized florets)
• 2 – medium Potatoes (cut into 1/2 inch cubes)
• 1 – medium Onion (chopped finely)
• 2 – Carrots (cut into 1/2 inch cubes)
• 100 g – French beans (chopped finely)
• 100 g – shelled peas
• For Gravy:
• 2 tbsps – daliya
• 3 tbsps – grated Coconut
• 3 – Green chillies
• 1/2 tsp – khus – khus
• 2 – Cloves
• 1 inch piece – Cinnamon
• 1 – Cardamom
• 1 – Cashew nut
• 1/2 cup – Milk

Method:

  1. Fry the onions, with a little salt, till light pink.
  2. Pressure cook all the vegetables (except cauliflower).
  3. Boil the cauliflower separately, so that it does not get mushy.
  4. Soak the khus – khus, cloves, cinnamon, cardamom and the cashew in a little water.
  5. Grind the spices with daliya, coconut, green chillies and milk.
  6. Add the vegetables to the onions, then add the ground mixture. Mix well.
  7. You can add more milk if the consistency is thick. If you want to make it rich, you could add fresh cream instead of milk.
  8. Check seasoning and adjust according to taste.
