Ingredients:

• 1 cup – any Pasta (leftover or freshly prepared)
• 1 – Carrot
• 1 – Cucumber
• 1/2 cup – Corn kernels
• 1 – Tomato
• 1/4 cup – red Cabbage (chopped)
• For Yoghurt dressing: 1 – Greek Yoghurt
• 2 tsp – mayonnaise
• 1 tsp – Olive oil
• salt to taste
• 1/4 tsp – pepper powder
• 1/4 tsp – dry Basil leaves

Method:

  1. Cut and grate the carrot. Finely chop the cucumber and tomatoes as small cubes.
  2. Take a large bowl and pour the pasta, red cabbage, corn kernels, grated carrot pieces, cucumber pieces and tomato cubes. Toss everything and keep the salad aside.
  3. In another bowl, add the yoghurt, mayonnaise, olive oil, salt, pepper powder and dry basil leaves. Mix everything well.
  4. Serve with the pasta salad.
