
Ingredients:
• 2 cups – All-purpose flour
• 3/4 cup – Sugar
• 1 cup – Dark chocolate (chopped)
• 1 tbsp – Instant Coffee powder
• 3 tbsp – Pistachios (chopped)
• 1 tsp – Baking powder
• 1/4 tsp – Baking soda
• 2 – eggs
• 1/2 cup – Oil
• 1/2 cup – Yogurt
Method:
- Beat the eggs and sugar together until this mixture turns pale and smooth.
- Add the coffee powder and beat again.
- Meanwhile, sieve together the flour with baking soda, baking powder and keep aside.
- Now melt the chopped chocolate with 1/3 cup water in a microwave oven and make a smooth chocolate sauce.
- Add this chocolate sauce, oil and yogurt to the egg-sugar mixture.
- Beat everything for a while.
- Pre-heat the oven to 350 degrees F.
- Gradually, add the dry ingredients to the wet ingredients with a spatula until the batter turns smooth.
- Gently fold the chopped pistachios to the batter.
- Divide this batter to the already greased muffin pan.
- Sprinkle a few chopped pistachios over the batter and bake for 20-25 minutes until a skewer inserted comes out clean.
