Ingredients:
• 2 cups – All-purpose flour
• 2 tsp – Baking powder
• 1 tsp – Salt
• 1 tsp – Pepper powder
• 2 tbsp – Sugar
• 1 – Egg (beaten)
• 1 cup – Milk
• 1/2 cup – Canola Oil
• 1 cup – Mushroom (chopped finely)
• 1 tbsp – Butter
• 3 tbsp – Coriander leaves (chopped finely)
Method:
- In a pan, saute the mushrooms with butter until they shrink a bit and remove from the heat.
- In another bowl, combine the flour, salt, sugar, pepper powder and baking powder.
- In a large bowl beat the egg, milk and oil together until everything gets well mixed.
- Stir in the dry ingredients gently with a spatula. Don’t over mix.
- Fold in the sauteed mushrooms and chopped coriander leaves.
- Spoon the cake batter to three-fourths of the greased mini cake mold.
- Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean.
- Cool for few minutes.
