Ingredients:

• 1 kg – Mutton kidney
• 1 – Onion finely sliced
• 2 – Tomatoes finely chopped
• 2 tsp – chilli powder
• 1 tsp – Turmeric powder
• 2 cups – water
• 2 tbsp – oil
• Salt to taste

Method:

  1. Chop the kidneys into halves. Clean well.
  2. Pressure cook with 2 cups of water for 45 mins and reserve stock.
  3. Remove from heat.
  4. Heat oil in a pan. Toss the pressure-cooked kidneys into it.
  5. Add chopped onions, tomatoes, chilli powder and turmeric powder. Stir-fry for a few minutes.
  6. Add 1/4 cup of the reserved stock and simmer till the gravy thickens.
  7. Sprinkle with salt and mix.
  8. Serve hot with rice or rotis.
