Ingredients:
• 2 – carrots, chopped finely
• 1 – big potato, cubed as small pieces
• 1 tbsp – Olive oil
• 1/2 cup – Milk
• To taste – salt
• 2 tbsp – dry Parsley leaves
• 1/4 tsp – pepper powder
Method:
- Heat the olive oil, along with chopped carrots, cubed potatoes, parsley leaves and salt in a microwave bowl, in microwave oven for 15 minutes in high (stir thrice in between).
- Add half a cup of water to the cooked vegetables and cook again for 5 minutes in high again.
- Blend the soup with a hand blender, along with milk and pepper powder. Also add salt, if needed.
- Serve warm, with toasted bread slices.
