Mexican nachos prepared with salsa and cheese sauce

Ingredients:
1/2 cup baked beans (available in the market, optional)
3 cups nachos chips (available in the market)

For Salsa Fresco
1 large tomato, chopped
1 med onion, finely chopped
1/2 capsicum, finely chopped
1 tsp green chilies, finely chopped
1 tbsp jalapeno, chopped
1 tsp lime juice
1 tsp oil
Salt to taste

For Cheese Sauce
1 cup white sauce (see basics)
2 tsp chopped garlic
1 tsp oil
1/2 cup grated cheese

Method:
1. For salsa fresco, mix together the tomatoes, onions, capsicum, green chilies, jalapenos, lime juice, salt and oil. Keep aside.
2. For cheese sauce, heat oil in a pan, add garlic and saute for a minute.
3. Add white sauce and grated cheese and cook for 23 minutes. Keep the cheese sauce aside.
4. Arrange nachos in a plate and sprinkle 2-3 tbsp salsa fresco on top.
5. Now pour 1 tbsp baked beans.
6. Pour cheese sauce on top and season with salt and pepper, if required and serve.
