Ingredients:
• For Sweet and Sour Mushroom Dressing:
• button Mushrooms – 1 cup, chopped finely
• soya oil – 3 tbsp
• Tomato ketchup – 4 tbsp
• Vinegar – 2 tbsp
• Sugar – 2 tbsp
• dark soya sauce – 2 tsp
• pepper to taste
• salt to taste
• For Salad:
• noodles – 200 gm
• cooked shrimps – 1 cup
• green Capsicum – ½ cup, cut into thin strips
• red Capsicum – ½ cup, cut into thin strips
• Spring onion – ½ cup, chopped
• fresh root Ginger – 2 tsp, minced
• pepper to taste
• salt to taste
Method:
- Heat oil for the dressing and lightly saute the mushrooms.
- Add rest of the ingredients for dressing and simmer for 2 minutes.
- Remove from fire and cool.
- Cook noodles as directed on the pack and drain.
- Combine the noodles with shrimps, green and red capsicums, spring onion and ginger.
- Toss with the dressing.
- Taste and correct the seasoning.
