Ingredients:

• Rice – 1 cup
• moong dal – 1/2 cup
• beans – 2 cups
• Cauliflower – 2 cups
• peas – 2 cups
• Potatoes – 2 cups
• Capsicum – 2 cups
• Jeera – 1 tsp
• Coconut Milk powder – 2 tbsp
• For Grinding:
• coriander leaves, chopped- 2tbsp
• pudina leaves, chopped- 2 tbsp
• green chillies- 2
• ginger- 1 /2
• salt to taste
• oil – 2 tbsp

Method:

  1. Wash and soak rice and dal for 10 mins. Heat oil in a cooker. Add jeera. When it splutters, add cubed vegetables, ground paste of chillies, ginger, coriander and pudina.
  2. Fry well, add drained dal and rice, salt to taste, coconut milk powder mixed in little warm water and mix.
  3. Add 2 cups of water (preferably hot), stir and cover the lid. Cook for 1 whistle.
  4. Garnish with coriander leaves and serve hot with onion or cucumber raitha.
