Ingredients:

• Okra – 500 gm
• Mustard Seeds – 1 tsp
• dry Red Chillies 3 to 4, broken into pieces
• Tamarind 3 cm round ball
• Curry leaves few
• Onion – ?cup, finely sliced
• Jaggery powder – 1 tsp
• coriander powder – 1 tsp
• cumin powder – 1 tsp
• oil – 4 tbsp
• salt to taste

Method:

  1. Soak tamarind in ?cup of water for 15-20 mins and extract the pulp.
  2. Wash the okra and wipe dry. Cut into 3 cm pieces.
  3. Heat oil in a kadai. Add mustard seeds.
  4. When they splutter, add red chillies.
  5. After few seconds, add curry leaves and onion.
  6. Fry till onion is light brown.
  7. Add okra and salt. Fry till okra is brown.
  8. Add jaggery, coriander and cumin powders and tamarind extract.
  9. Simmer till the okra is cooked and then masala coats the pieces.
