Ingredients:

• 10 – Okra
• 1 cup – Tamarind extract
• 2 – Tomatoes (pureed)
• 5 – Shallots
• 3 Garlic Cloves
• 1 tsp – Pepper powder
• 1 tsp – Coriander powder
• 1/2 tsp – Red Chilli powder
• 1/4 tsp – Cumin seed powder
• 1/4 cup – Gingili oil
• 1 tsp – Mustard seeds, Fenugreek and Urad Dal
• 5 – Curry leaves
• Salt

Method:

  1. Heat the gingili oil in a kadai, add the mustard seeds, fenugreek seeds, urad dal and let them splutter.
  2. Add the whole shallots, curry leaves, garlic cloves and stir fry until the shallots turn translucent.
  3. Add the okra pieces and stir for a few minutes.
  4. Add the tamarind juice, pureed tomatoes with pepper powder, cumin seed powder, coriander powder, red chilli powder and salt.
  5. Bring the gravy to a boil and cook until the oil separates. Take off heat.
  6. Serve hot with rice and papads.
