Ingredients:
• 3 – eggs
• 300g – Caster Sugar
• 300g – Plain Flour
• 165 ml – Milk
• 165 ml – Extra virgin Olive oil
• 1 tbsp – Baking powder
• 1 – Grated zest of Lemon
• 1 – Grated Zest of Orange
• 1 – Juice of 1 lemon.
Method:
- Preheat the oven to180 degree Celsius.
- Butter and line a 25 cm round cake tin.
- Beat the sugar and eggs until they are pale and creamy.
- Stir in the remaining ingredient and pour into the prepared tin.
- Bake for 30 to 40 mins until a skewer comes out clean.
- Allow it to cool in the tin.
- Turn it to a wire rack and dust it with icing sugar.
