Ingredients:
• 125 gms – Butter
• 2 cups – self raising flour
• 1 cup – Sugar
• 1 cup – Coconut
• 1/2 cup – mixed peel
• 1 – Egg
• 2 tsp – grated Sugar rind
• A pinch – salt
• 2 tbsp – Orange juice
Method:
- Cream butter and sugar until light and fluffy. Add egg beat well. Stir in sifted dry ingredients and orange juice.
- Roll mixture into small balls – the size of a walnut.
- Press one side of balls in finely chopped peel.
- Place on lightly greased oven trays, peel side up.
- Bake in moderate oven 12 minutes or until light golden brown.
