Ingredients:

• 12 – Egg yolks
• 1 pound – clarified Butter
• 1/8 cup – fresh Orange juice
• 1 pinch black pepper
• 1 pinch salt

Method:

  1. Whip the egg yolks with orange juice until light and frothy.
  2. The butter must be clarified (at 120 degrees F) for the next step.
  3. Slowly add butter while constantly whipping egg mixture.
  4. Add salt and pepper to taste.
