Ingredients:
• 8 to 10 – Small paan (betel) leaves (You need really thin, tender paan leaves for this recipe)
• For the bajji batter:
• One and half cups of gram flour
• 1 tsp chilli powder
• 1 tsp Turmeric powder
• 1 pinch baking soda
• One cup water
• Salt to taste
• Oil for frying
Method:
- Mix all the ingredients of the bajji batter to make into a smooth paste by adding water little by little. The batter should not be too thick or too watery. Heat enough oil in a kadai and wait till it is smoking.
- Dip each paan leaf into the batter and drop into the oil.
- Fry till it is well done.
- Delicious paan bajji is ready.
- You can even chop the paan leaves finely and add it to the batter.
- Take a little batter in your palm and drop into the oil.
- If desired, lay them on a serving plate and sprinkle chaat masala over them. Serve hot.
