Ingredients:

• 5 large green mangoes
• 10 Bitter gourds
• 15 Green chillies
• 6 limes slit, in fours
• 100 gms – Lotus roots
• 50 gms – Fenugreek seeds
• 50 gms – Nigella seeds
• 50 gms – Fennel seeds
• 50 gms – Turmeric powder
• 20 gms – kashmiri chilli powder
• 2 cups – Mustard oil

Method:

  1. Cut the mangoes into small pieces and discard seeds.
  2. Cut the bitter-gourds into thick discs. Slit the green chillies.
  3. Clean and cut the lotus roots into 1/2 cm thick discs.
  4. Heat the oil to smoking point and cool it.
  5. Combine all the ingredients, add to the prepared vegetables and fill in jar.
  6. Sun for a few days till ready.
