Ingredients:
• 2 cups – Cooked Rice
• 1 cup – Chickpeas (cooked)
• 1 – Onion (large and chopped finely)
• 3 Green chillies
• 2 cups – Spinach/palak (chopped)
• 1 tsp – Ginger Garlic paste
• 1 tsp – Garam Masala powder
• 1/2 tsp – Pepper powder
• Salt
• Oil
• 1 – Bay Leaves
• 1 tsp – Shah Jeera
Method:
- Heat a heavy bottomed pan with oil and fry the bay leaves, shah jeera until they turn brown.
- Add the chopped onions, ginger garlic paste and saute until the onions turn translucent.
- Now add the already prepared spinach puree, garam masala powder to the pan and cook on simmer for a few minutes.
- Finally add the cooked chickpeas and cook for a few more minutes.
- Add the cooked rice to this palak-chickpeas mixture, toss everything gently until the rice gets well coated with the masala.
- Take off heat, add pepper powder and give a gentle toss again.
- Serve with raita.
