Ingredients:

• 2 cups – Cooked Rice
• 1 cup – Chickpeas (cooked)
• 1 – Onion (large and chopped finely)
• 3 Green chillies
• 2 cups – Spinach/palak (chopped)
• 1 tsp – Ginger Garlic paste
• 1 tsp – Garam Masala powder
• 1/2 tsp – Pepper powder
• Salt
• Oil
• 1 – Bay Leaves
• 1 tsp – Shah Jeera

Method:

  1. Heat a heavy bottomed pan with oil and fry the bay leaves, shah jeera until they turn brown.
  2. Add the chopped onions, ginger garlic paste and saute until the onions turn translucent.
  3. Now add the already prepared spinach puree, garam masala powder to the pan and cook on simmer for a few minutes.
  4. Finally add the cooked chickpeas and cook for a few more minutes.
  5. Add the cooked rice to this palak-chickpeas mixture, toss everything gently until the rice gets well coated with the masala.
  6. Take off heat, add pepper powder and give a gentle toss again.
  7. Serve with raita.
