Pancakes With Spinach And Cheese

Ingredients:

• 25 gms – Butter
• 75 gms- Cheese
• 3 tbsp – Condensed Milk
• 20 gms – Corn flour
• 3 – eggs
• 400 g – Rice flour
• 15 ml – Milk (for the filling)
• 1 litre – Milk
• 1 tsp – Pepper powder
• Salt
• 2 bunches – Spinach (palak)

Method:

  1. Mix the rice flour with salt in a vessel.
  2. Make a well in the middle, add the eggs and milk, beat the mixture until smooth.
  3. Beat and break all the lumps, until bubbles appear.
  4. Keep the batter aside.
  5. For the filling:
  6. Wash spinach, add salt and water and keep on the flame for 10-15 mins.
  7. Drain well, cut and keep aside.
  8. Melt butter in a saucepan. Add salt, pepper, milk, cream and flour.
  9. Stir till the sauce thickens.
  10. Then add cooked spinach and grated cheese.
  11. Keep on the flame till the cheese melts.
  12. Make the pancakes, spread the filling and fold.
