Ingredients:
• 1 kg – fresh Paneer (cottage cheese), crumbled
• 2 tbsp – red curry paste
• 2 eggs, lightly beaten
• 12 spring onions, chopped
• 250 gms – Corn kernels, washed and drained
• 1/2 cup – fresh breadcrumbs
• 1/2 cup – chopped fresh coriander
• 1/4 cup – chopped fresh Mint
• For the sauce (combine and mix well):
• 1 cup – sweet chilli sauce
• 1/2 red capsicum, finely chopped
Method:
- Combine and mix all ingredients for the patties in a bowl.
- Divide the mixture equally into 30 balls. Shape into patties.
- Place the patties on a baking tray and bake uncovered in a preheated oven for 25-30 mins. or until well browned.
- In between baking time, turn the patties on their sides to make sure the patties are well browned on both sides.
- Serve hot with sauce.
