Ingredients:
• short macaroni – 100 gm
• boiled vegetables – 2 cups
• Onions – 1 cup, chopped
• Tomatoes – 1 cup, chopped
• Green chillies 3, minced
• Ginger 2 cm, minced
• Celery 2 stalks, chopped
• refined oil – 3 tbsp
• chilli powder – 1/2 tsp, optional
• Tomato ketchup -1/2 cup
• salt to taste
• For Sauce :
• Milk – 300 ml
• Butter – 2 tbsp Maida – 2 tbsp
• cheddar cheese – 100 gm, grated
• Egg 1, lightly beaten
• Butter – 1 tbsp, for topping
• salt and pepper to taste
Method:
- Cook macaroni as per the directions on the pack.
- Heat oil, fry onion till light brown.
- Add green chillies, ginger and celery and fry for 1 minute.
- Add tomatoes, chilli powder, ketchup, vegetables, macaroni and salt.
- Mix well (add a little water or stock if necessary) and remove from fire.
- Pour in a greased baking dish.
- Melt butter for sauce, add Maida and fry till the raw smell is lost.
- Add milk, and cook and stir till it just begins to boil.
- Remove from fire, add one and a half the beaten egg and one and a half the grated cheese, salt and pepper.
- Pour over the macaroni vegetable mixture.
- Sprinkle remaining cheese on top.
- Pour remaining egg over it.
- Dot with 1 tbsp of butter and bake in a hot oven (200 degrees centigrade ) till brown on top. Serve hot.
