Ingredients:

• 1 lb ground beef.
• 1.5 cup – Beef stock.
• 1/2 lb macaroni.
• 1/2 cup – butter.
• 1/2 cup – all purpose flour.
• 2 cups – milk.
• 1/2 cup – plain yogurt.
• 1.5 cups – grated kefalotiri cheese.
• 2 tbsp – extra virgin Olive oil.
• 1 onion, chopped.
• 1 Garlic clove, crushed.
• 2 tsp – Tomato paste.
• 1/2 tsp – ground cinnamon.
• 1 tsp – chopped fresh Mint pepper to taste.
• salt to taste.

Method:

  1. Preheat oven to 375 degree F(190C).
  2. In a skillet, heat oil.
  3. Add onion and garlic and cook until soft.
  4. Add beef and stir until browned.
  5. Stir in stock, tomato paste, cinnamon, mint, salt and pepper.
  6. Simmer 10-15 mins or until sauce is reduced.
  7. Meanwhile, in a pan of boiling water, cook macaroni 8 minutes or until tender.
  8. Drain, rinse with cold water and set aside.
  9. In a saucepan, melt butter.
  10. Stir in flour and cook 1 minute.
  11. Gradually stir in milk and yogurt and simmer 5 mins.
  12. Stir in half the cheese.
  13. Season with salt and pepper.
  14. Mix macaroni into cheese sauce. Spread half the macaroni mixture over bottom of a large gratin or souffle dish.
  15. Cover with meat sauce, then top with remaining macaroni.
  16. Sprinkle remaining cheese over top.
  17. Bake for 45 mins or until it turns brown.
