Ingredients:
• 5 to 6 colocasia leaves.
• 1.5 cups – gram flour.
• 1.5 tsp – Turmeric powder.
• 1 tsp – Red Chilli powder.
• 1 pinch – Asafoetida powder.
• 3 to 4 tbsp – Tamarind water.
• Sugar to taste.
• salt to taste.
• For Tempering:
• 1 tsp – sesame seeds.
• 1.5 tsp – cumin seeds.
• 2 to 3 tbsp – oil.
• 1 pinch – asafoetida.
• For Garnish:
• 2 tbsp – fresh coriander.
• 1 tbsp – chopped coriander leaves.
Method:
- Wash and dry the colocasia leaves.
- Make a paste of gram flour, turmeric powder, red chilli powder, asafoetida, salt and sugar to taste.
- Mix well. Add tamarind water and make paste.
- Place the wrong side of the leaves and smear some paste evenly.
- Place each leaf one on top of the other and fold in a roll.
- In a steamer, steam the rolls for about 20 mins till done.
- Check by inserting a knife.
- It should come out clean. Cool.
- Cut into small pieces.
- Heat oil in a deep vessel, add sesame seeds, cumin seeds and asafoetida.
- Add the patras in the pan and toss lightly.
- Cook for 5 mins on low flame till crisp.
- Garnish with fresh coconut and coriander leaves.
