Ingredients:
• Pavakkai (karela) – 1 (big variety) or 250 g (small sized).
• Chilli powder – 2 tbsp.
• Tamarind – 1 (lemon sized).
• Turmeric powder – 1 tsp.
• 1 tsp – Mustard seeds.
• Sugar or Jaggery – 1 tsp.
• A pinch – Hing.
• Salt to taste.
• oil – 2 tsp.
Method:
- Cut the karela into small pieces and fry in hot oil until brown.
- Soak the tamarind and extract a thick juice.
- Heat 2 tsp of oil in a kadai and add the mustard seeds.
- When the seeds crackle, pour the tamarind bulb, turmeric power, hing and salt.
- When the raw smell of tamarind disappears, add the chilli powder and the fried karela.
- Remove from the flame and add 1 tsp of sugar or jaggery.
