Ingredients:
• 1 cup – Ghee
• 1/2 cup – powdered Sugar
• 1 cup – Brown sugar (or powdered jaggery)
• 2 eggs
• 1 tsp – vanilla essence
• 3 cups – sifted flour
• 1/2 tsp – baking soda
• 1/2 tsp – salt
• 1&1/4 cups – lightly crushed Peanuts (fried and salted)
• a little Sugar to sprinkle
Method:
- Beat the ghee with the powdered sugar and brown sugar till light and fluffy.
- Add the eggs, one at a time, beating well.
- Add the vanilla essence.
- Sift the flour together with baking soda and salt.
- Add flour to egg mixture.
- Add the crushed peanuts (with the inner brown skin removed).
- Chill the dough for 1 hour.
- Shape the dough into small balls the size of a walnut; place on a greased baking tray and flatten with fingers.
- Sprinkle a little sugar on each biscuit.
- Bake at 185 degrees for about 10 mins. till the biscuits are golden brown.
- Remove from the tray while biscuits are hot and cool on wire racks.
- Store in airtight containers when completely cold.
