Ingredients:

• 1 litre milk.
• 100g – basmati rice.
• 1 tbsp – cashewnut, badam/almond, Pistachio paste.
• 6 cardamom.
• 3-4 strands – saffron.
• 400g – sweetened condensed milk.
• 170g – condensed Milk cream.
• Sugar to taste.
• .
• For garnishing:
• 4 almonds, juliened.
• 4 Pista juliened.
• 1 pinch – saffron.
• 4-8 raisins, optional.

Method:

  1. Soak and wash rice and drain in a cloth (blend to a coarse powder in a blender pretty much like semolina).
  2. Boil milk, add whole cardamom and remove it from the milk after some time.
  3. Add rice and boil, stirring constantly to avoid lumps.
  4. Add water if necessary and cook till done.
  5. Reduce heat, then add condensed milk and cream.
  6. Add pista, badam, cashew paste stirring constantly (even better can use a hand blender).
  7. Add sugar for taste, garnish with juliened almonds, pista and saffron.
  8. Chill for 5-6 hrs and serve cold.
