Ingredients:
• Pineapple – 1, medium sized, not fully ripe
• Cashew nuts – 3 tbsp
• Almonds – 2 tbsp
• Melon seeds – 2 tbsp
• Ginger – 1 tsp, chopped
• Green chillies – 3
• Coriander powder – 1 tsp
• Cinnamon – 2″ piece
• Nutmeg – 1 small piece
• Ghee or oil – 2 tbsp
• Raisins – 1 tbsp
• Red Chillies – 2, broken into halves
• Fresh Cream – 1/2 cup
• Salt to taste
Method:
- Peel the pineapple and cut into small pieces.
- Split cashew nuts into halves.
- Blanch and peel the almonds.
- Grind half of the cashew nuts with half the almonds, melon seeds, ginger, green and red chillies and coriander powder to a fine paste.
- Slice the remaining almonds.
- Crush cinnamon and nutmeg together to a coarse powder.
- Heat ghee or oil. Add the remaining cashew nuts and sliced almonds.
- When they are light brown, add broken chillies and raisins.
- When the raisins puff, add the ground paste and powdered spices. Fry till fragrant.
- Add pineapple pieces, salt and 1 cup of water.
- Cover and simmer till pineapple is soft.
- Stir in the cream and remove from fire.
- Serve hot with rotis.
