Ingredients:
• 1 cup – Pineapple puree
• 1.5 cup – Fine semolina
• 1/2 cup – Ghee
• 1/2 cup – Sugar
• 1/2 cup – Cashews + 1 tsp Ghee
• 4-5 – Strands of Saffron dissolved in 1/4 cup warm Milk
• 1/2 tsp – Cardamom
• 1 cup – Skimmed/ Whole Milk
• 1 cup – Water
Method:
- In a microwave safe bowl, roast cashews in 1 tsp ghee for a minute on high and keep aside.
- Combine semolina and ghee in the bowl and mix well.
- Microwave it for 4 minutes on high, take it out and stir.
- Put it back in the microwave for 3-4 minutes.
- Repeat the process 4-5 times till the rava is roasted.
- Add water and milk and give it a nice stir.
- Microwave again for 3-4 minutes on high.
- Finally pour in the pineapple puree and sugar, mix well.
- Repeat the process of microwave on high for 2 min for 3-4 times, each time giving it a nice stir.
- Add cardamom powder and saffron strands and fold.
- Microwave for 2 min again on medium.
- Garnish with roasted cashews.
