Ingredients:

• 6 cups – rich Mutton stock
• 4 tbsp – Butter
• 2 cups – Onion
• 6 slices – bread
• salt and pepper
• ground cheese

Method:

  1. Melt butter. Add thinly sliced onions. Brown these evenly, then add the mutton stock, salt and pepper.
  2. Allow it to simmer for 15 mins.
  3. Spread butter lightly in 6 slices of bread and cut into squares.
  4. Sprinkle ground cheese on them and grill.
  5. Pour soup into bowls and float bread squares in each.
  6. Sprinkle additional ground cheese and serve piping hot.
