Ingredients:

• 1 (16 oz. can) – Chickpeas or garbanzo beans
• 1/4 cup – liquid from can of Chickpeas
• 3-5 tbsp – Lemon juice (depending on taste)
• 1.5 tbsp – tahini
• 2 Cloves – garlic, crushed
• 1/2 tsp – salt
• 2 tbsp – Olive oil

Method:

  1. Drain chickpeas and set aside liquid from can.
  2. Combine remaining ingredients in blender or food processor.
  3. Add 1/4 cup of liquid from chickpeas.
  4. Blend for 3-5 minutes on low until thoroughly mixed and smooth.
  5. Place in serving bowl, and create a shallow well in the centre of the hummus.
  6. Add a small amount (1-2 tbsp) of olive oil in the well.
  7. Garnish with parsley (optional).
  8. Serve immediately with fresh, warm or toasted pita bread, or cover and refrigerate.
