Ingredients:

• 1/2 kg – kovakai (aka tindora, dhondakai)
• 1 – Potatoes
• 5 pods – Garlic
• 1/2 inch – Ginger
• 1.5 tsp – chilli powder
• 1.5 tsp – salt
• 1/4 tsp – fennel seeds/cumin
• 1/2 tsp – Haldi
• 1/2 tsp – Mustard Seeds
• 1-2 cups – oil

Method:

  1. Heat the mustard and fennel seeds in oil.
  2. Add mashed garlic and ginger to the mustard when it sputters.
  3. Then, add haldi powder and chilli powder to it.
  4. Slit the tindora vertically and cut the potato into cubes.
  5. Fry potatoes in oil and then add tindora to it.
  6. Add salt to taste.
  7. Sprinkle water and put a lid on the vessel and allow it to cook for 6 minutes.
  8. Remove lid and add 2 tsp of oil and mix well and fry it for 4-5 minutes.
