
Ingredients:
• For khandvi:
• 1 cup – gram flour
• 3 cups – Butter milk
• salt to taste
• Pinch of Turmeric powder (Haldi)
• For garnishing:
• 1 tbsp – oil
• 1 tsp – Mustard Seeds
• 1 tsp – sesame seeds
• 2-3 – Green chilli thinly sliced
• Water
• Coconut grated
• Coriander leaves chopped
Method:
- For khandvi:
- Mix besan, buttermilk, salt and turmeric powder in a microwave safe bowl.
- Make sure besan is mixed well in buttermilk.
- Cook the batter in microwave for 5 mins.
- Take out the batter, stir well and put it back in the microwave for 3 more mins.
- Take out again and stir well and put it back for 2 more mins.
- Spread the cooked batter while hot over the aluminium foil (or back of steel thali) very thinly. Let it cool.
- Then cut strips 3 inches wide and 9-10 inches long.
- Roll them neatly.
- For garnishing:
- Heat oil in small pan and add mustard seeds.
- When mustard seeds crackles, add sesame seeds and green chillies.
- Spread them over khandvi.
- Garnished with coconut and coriander leaves.
