Ingredients:
• 4 to 5 – ripe Tomatoes
• 50 g – grated Carrot
• 50 g – grated Cabbage
• 50 g – grated Capsicum
• Salt as per taste
• 1/4 tsp – Turmeric powder
• 1 tsp – coriander powder
• 1 tsp – Red Chilli powder
• 1 tsp – kitchen king masala
• 1 cup – Coriander leaves
• oil for cooking
Method:
- For the stuffing:
- Heat 1 tsp oil in a pan. Add the grated vegetables, spices and salt
- Mix well. Cover it and allow the vegetables to cook.
- Remove the top of tomatoes.
- Scoop out the seeds.
- Stuff the tomatoes with the vegetables.
- Heat 2 tsp oil in a pan. Place the stuffed tomatoes.
- Cover and cook till the tomatoes are tender.
- Decorate with coriander leaves.
- Serve with rice.
