Ingredients:
• 1 cup – cooked shredded Chicken
• 1 1.5 tsp – sesame seeds
• 1.5 cup – carrot, diced
• 1.5 cup – pineapple, diced
• 1 cup – spring onion, sliced
• 2 tbsp – Coriander leaves
• For Dressing:
• 2 tsps – oil
• 1 tsp – Vinegar
• 1 tsp – Ginger paste
• 1.5 tsp – pepper
• salt to taste
Method:
- Roast the sesame seeds in a pan without the oil, till brown in colour.
- Remove and set aside.
- In a bowl, add the chicken, diced carrots, spring onions, pineapple and the coriander leaves.
- Pour the dressing over the chicken mixture and mix well.
- Refrigerate the chicken and just before serving sprinkle the sesame seeds on top.
- Serve cold.
