Ingredients:
• 3 cups – cooked chicken, roughly chopped
• 1 tbsp – Butter
• 1 – onion, finely chopped
• 1 – carrot, finely chopped
• 1/2 – capsicum, finely chopped
• 2 sticks – celery, finely sliced
• 2 tbsp – Corn flour
• 1 tbsp – soya sauce
• 1 tbsp – Brown sugar
• 1 cup – Pineapple juice
• 1 cup – water
• 2 – Chicken stock cubes
• salt and pepper to taste
Method:
- Place butter and vegetables in a 2-litre casserole dish.
- Cook, covered on high 4-6 mins.
- Blend together corn flour, soya sauce, brown sugar, pineapple juice, water, stock cubes, salt and pepper.
- Add to the vegetables and cook on medium for 12-14 mins.
- Stir in chicken.
- Heat on high for 1-2 mins.
- Serve with rice.
