Ingredients:

• 1 cup – all purpose flour (Maida).
• 2 tbsp – sugar.
• 1/2 tsp – salt.
• 1/2 tsp – baking powder.
• 1/2 cup (firm but not too hard) – butter.

• 2 cup, halved and stoned – plums.
• 4 tbsp – sugar.
• 1/2 tsp – Cinnamon powder.

• 2 Egg yolks.
• 1/2 tsp – vanilla essence.
• 1 cup – thick cream1 tbsp – sugar.

Method:

  1. Preheat the oven to 200 C. Line the base and sides of a 8 and a half square cake pan with aluminium foil.
  2. Mix together the flour, sugar, salt and baking powder. Cut the butter into small pieces and rub into the flour mixture till it is evenly distributed.
  3. Sprinkle this mixture in the pan and press firmly to cover the base and half way up the sides of the pan.
  4. Arrange the plum halves over the crumb mixture. Combine sugar and cinnamon (in layer
  5. ) and sprinkle over the plums. Bake for 15 mins.
  6. Beat the egg yolks with essence and sugar till smooth and light. Add the cream and pour over the plums.
  7. Bake till the custard is set and the edges are light brown (25-30 mins).
  8. Serve warm.
