Ingredients:
• 1 cup – poha.
• 1 – onion, cut.
• 1 – capsicum, cut.
• 1 – boiled potato.
• 1 tsp – Turmeric powder.
• 1 – tomato, cut.
• 3 – green chillies, cut.
• 1 tsp – mustard.
• 1 tsp – urad dhal.
• 1 – Lemon.
• 4 tsp – oil.
• Some cut coriander.
Method:
- Heat oil in a pan. Add mustard, urad dal and cut green chillies.
- When the mustard starts to pop, add the chopped onions and capsicum.
- Saute until the onions turn a light brown.
- Chop the boiled potato and add it to the pan, along with the chopped tomato.
- Meanwhile, soak poha in water for 2 mins.
- Drain and add the poha to the pan.
- Add in turmeric and salt, and mix well.
- Remove from heat. When it cools a little, squeeze the lemon over it.
- Serve garnished with coriander.
