Ingredients:
• 1 kg – potatoes.
• 2 – Coconuts, extract about 4 cups of Coconut milk.
• 6 – eggs.
• 1 kg – sugar.
• 150 g – Maida flour(refined).
• 6 tsp – rose water.
• 3 – Nutmeg (jaiphal), powdered.
Method:
- Boil and mash the potatoes, without the skin.
- Extract about 4 cups of coconut milk and mix with the mashed potatoes.
- Beat the eggs and sugar well.
- Add the flour to the mashed potatoes.
- Add the beaten egg and sugar.
- Mix well and add a little coconut milk, if the batter is thick.
- Add rose water, a pinch of salt and powdered nutmeg.
- Heat 4 tbsps of ghee in a vessel and pour the batter into it. Keep it for five minutes, mixing well.
- Grease a tin, and pour in the batter. Bake in a moderate oven at 150 degree F for 30-45 mins.
