Ingredients:

• 1 cup – peeled potatoes, cut into long strips or small pieces
• 1 cup – Brinjal, cut into long strips or small pieces
• 1/4 cup – Onions, Sliced
• 1 tsp – Red Chilli powder
• A pinch of Turmeric powder
• A few Curry leaves
• Salt
• 1 tsp – Oil
• 1/2 tsp – Mustard Seeds
• 1/4 tsp – Cumin seeds
• 1/2 tsp – Bengal Gram
• 1/2 tsp – Black gram

Method:

  1. Heat oil in a non-stick pan and add mustard seeds.
  2. When they pop, add cumin seeds and the dals.
  3. Fry for a while until the dals turn light golden brown in colour.
  4. Then add the curry leaves, potatoes, brinjal, onions and mix well.
  5. Add turmeric powder, chilli powder and salt and mix well.
  6. Cover and allow the vegetables to cook for some time.
  7. Keep on low flame. Saute well and leave on the flame until the vegetables become soft and cooked.
  8. Then transfer the contents to a serving bowl and enjoy with steaming hot rice or chapattis.
