Ingredients:

• 4 – medium potatoes.
• 1/2 cup – plain flour.
• 1/2 cup – gram flour.
• 1 tsp – Corn flour.
• 1 tsp – Rice flour.
• 2 – green chillies.
• 1/2 inch piece – ginger.
• 1 flake – garlic.
• Salt to taste.
• oil for Deep frying.

Method:

  1. Peel potatoes, and cut into thick diagonal slices. Sieve all the flour together in a large bowl.
  2. Crush ginger, garlic, chillies in a small mixie till fine.
  3. Add to flour mixture. Add salt.
  4. Add water at a time to form a batter.
  5. Batter should coat the back of a spoon, but not too thickly.
  6. Heat oil in frying pan, when hot, add 1 tbsp hot oil to batter.
  7. When oil is hot enough, dip potatoes in batter at a time.
  8. Coat with batter and let them in hot oil one by one.
  9. Deep fry on medium heat, till light golden, flipping when necessary.
  10. Drain, place for a minute on absorbent clean paper.
  11. Serve hot with tomato sauce and green chutney.
