Ingredients:

• 1 – Potato, sliced thin
• 2 – eggs
• oil for cooking
• Salt as per taste
• Freshly ground Pepper

Method:

  1. Heat 1 tsp of oil in a skillet.
  2. Place the sliced potato without overlapping.
  3. Sprinkle salt and ground pepper, cover and cook for 1 minute.
  4. Then turn and then cook the other side for 1 minute.
  5. Sprinkle 1.5 tsp of oil over them.
  6. Beat two eggs well in a bowl, season with salt and pepper.
  7. Pour the beaten egg on top of the potatoes.
  8. Gently raise the sides of the omelette and allow the oil to slip in. Cook for 1 minute.
  9. Carefully flip the omelette without breaking it.
  10. Cook for 1 more minute.
  11. Remove from heat.
