Ingredients:
• 750 gm – prawns, peeled and de-veined
• 1 tbsp -lemon juice
• 2 cups – Coconut Milk
• 1 cup – diced Brinjal
• 1 tsp – Garam Masala
• 3 tbsp – oil
• 2 cups – diced Onions
• 6 Green chillies – chopped
• 1 ginger, chopped
• 6 pods garlic, chopped
• salt to taste
• For Paste:
• 2 tbsp – Coriander leaves
• 1 tsp – Cumin seeds
• 1/2 tsp – Turmeric powder
• 6 Cloves Garlic
• 3 to 4 Green chillies
• 1 tbsp – Coriander seeds
Method:
- Heat the oil, add the sliced onion and saute.
- Add the chopped green chillies, ginger and garlic and stir fry till glossy.
- Add the prawns over high heat and saute till they change colour.
- Lower the flame and add the ground masala.
- Fry on a high heat till the masala is completely cooked.
- Add the brinjals and coconut milk and bring to a boil.
- Add salt to taste and the garam masala.
- Simmer till the brinjal is completely cooked.
- Serve hot.
