Ingredients:

• 350 g – Prawns with tail.
• 60 ml – vegetable oil.
• 80 g – onions.
• 10 g – garlic.
• 100 ml – Tamarind pulp.
• 30 g – Lemon grass.
• 10 g – fresh Turmeric root.
• 5 sprigs – curry leaves.
• 2g – aniseed.
• 10g – red chillies.
• 1 – cinnamon.
• 3g – cumin.
• 100g – tomatoes.
• Salt and pepper to taste|

Method:

  1. Clean the prawns, marinate in red chilli powder, salt, 1/2 the tamarind pulp, cumin seeds and corn flour for half an hour.
  2. Deep fry in hot oil, taking care not to overcook the prawns. Keep aside.
  3. Method for sauce:
  4. Fry chopped onions in oil with chopped garlic and saute well.
  5. Add curry leaves, crushed lemon grass stalk, aniseed, cinnamon, chopped fresh long red chilli and tomatoes.
  6. Cook well till the sauce has a coarse consistency. Season with salt and pepper and garnish with coriander sprigs.
