Ingredients:
• 10 – Prunes (dried plums), chopped and pitted
• 1/2 cup – rolled oats (dry-roasted)
• 1 cup + 2 tbsp – whole Wheat flour
• 1 tbsp – Honey
• 1 tsp – Ghee
• 2 – eggs
• 1 tsp – baking powder
• 1/4 tsp – baking soda
• a pinch of salt
• 1/2 cup – Butter
• 1/2 cup – granulated Sugar
• 2 tbsp – Brown sugar
• 1.5 tsp – vanilla essence
Method:
- Dry-roast the oats for 5 minutes on low flame and keep aside.
- Sieve the whole wheat flour, baking powder, baking soda and salt together in a bowl.
- Take another bowl, add the butter and sugar and mix well with a hand mixer until fluffy.
- Add the eggs and mix for about 3 minutes.
- Add vanilla essence and mix for about 2 minutes with a hand mixer.
- Add honey and ghee and mix.
- Gently pour the dry flour mixture into this bowl.
- Use a spatula to gently mix the ingredients.
- Add the chopped prunes and roasted oats.
- Mix well with a wooden spatula.
- Grease a cake tin and dust flour over it.
- Pour the mixture into the tin evenly.
- Bake in a preheated oven for 35 minutes at 170 degrees Celsius.
- If not done fully, bake for another 5 minutes. Check by inserting a knife at the centre of the cake. If the knife comes out clean, the cake is done.
- Move to a wire rack to cool for 10 minutes.
- Serve with tea or an anytime snack.
