Ingredients:

• 1.5 cups – Pumpkin or Yellow Squash grated
• 1 small – Onion, very finely chopped
• 2 Cloves – Garlic
• 1 tsp – Cumin powder
• 1 tsp – Coriander powder
• 1 tsp – Garam Masala
• 1 tsp – Chilli powder
• Salt to taste
• 1 tsp – Sugar
• 1 tbsp – Cooking oil

Method:

  1. Mix flour, salt, water, oil and make into a soft dough.
  2. Keep aside for 1/2 an hour.
  3. Heat oil, add onion, garlic, pumpkin, all the spices, salt, sugar and saute for 15 mins (or till done).
  4. Roll a lemon sized dough, fill it with the stuffing, seal the edges and carefully roll into a 5-inch diameter paratha.
  5. Grease a non-stick tawa with little oil and cook the paratha on both sides till golden brown.
  6. Serve with chilled curd.
