Ingredients:
• Medium over-ripe bananas, mashed – 3
• All-purpose flour – 1.75 cups
• Baking powder – 1.5 tsp
• Baking soda – 1 tsp
• Caster Sugar – 1.5 cups
• Unsweetened cocoa powder – 3/4 cup
• Eggs, beaten – 2
• Milk – 1/2 cup
• Water – 1 cup
• Vegetable oil – 1/2 cup
• Vanilla essence – 1 tsp
• Salt – 1/4 tsp
• For topping (optional):
• Pure icing Sugar – 1.5 cups
• Medium over ripe banana, mashed – 1/4 cup
• Soft Butter – 1 tbsp
• Vanilla essence – 1/2 tsp
Method:
- Preheat oven to 350F/180C.
- In a mixing bowl, whisk flour, sugar, cocoa, baking powder, baking soda and salt.
- In a separate bowl, whisk bananas, eggs, oil, milk, water and vanilla.
- Add wet to dry and stir until just combined.
- Pour batter into a greased and floured cake pan.
- Bake for 35-40 mins or until a wooden pick comes out clean.
- Allow to cool before removing from pan.
- Finish cooled cake with chocolate glaze topping, if desired.
- Topping:
- Combine all ingredients in a bowl and stir until icing is spreadable.
- Add more sugar if necessary to thicken.
- Spread icing over cold cake immediately.
- Garnish with banana slices and chocolate shavings.
